Most of the recipes on this site are here because I felt compelled to write a recipe and post it.

But once in a while, I get a fantastic reader suggestion. So when I received an email with the Subject:ย โ€œThis looks like it would be fun to make,โ€ followed by a link to Reddit, I got to work immediately.

During my research and development, I tried making a cheese-only version. It actually wasnโ€™t very good and my kids wouldnโ€™t eat it. But with pepperoni? No leftovers. Do with this information what you will.

Ingredient notes

  • Refrigerated biscuits: These are the biscuits in the exploding cans you find in the refrigerator section of the grocery store. Pillsbury is a common brand. Cut the biscuits in half lengthwise so instead of 8 biscuit circles, you now have 16 biscuit circles.

Step-by-step instructions

  1. Preheat oven to 400 degrees. Coat a 9-inch pie plate with nonstick spray. In a small bowl, whisk together melted butter and garlic powder. Form each biscuit half into a circle and flatten into a disk. Top with one piece of pepperoni and 1/2-ounce piece of mozzarella cheese.

  1. Fold the sides of the biscuit up and over the pepperoni and cheese until it is completely covered. Shape into a ball.

  1. Place in the prepared pan. Repeat with remaining biscuit halves, 15 pepperoni pieces, and mozzarella cheese pieces.

  1. When all the bread pieces have been formed and placed in the baking dish, arrange the remaining pepperoni (about 24 pieces) between the biscuits.ย Brush with garlic butter.

  1. Bake for 15 to 20 minutes, until the biscuits are starting to brown. Remove from oven and top with shredded mozzarella cheese.

  1. Turn off oven, then return bread to oven until cheese is melted, 1 to 2 minutes longer. Garnish with parsley if desired and serve withย Marinara sauceย orย Ranch dressing.

    1. Hi Rose, I havenโ€™t tried it myself, but I donโ€™t see why not. I would assemble it and wrap with plastic wrap tightly. I wouldnโ€™t make it more than 24 hours in advance. โ€“ Meggan

    1. 100% yes to that! Definitely. I use those in my pizza sticks too (basically mozz cheese sticks wrapped in wontons with pepperoni and deep-fried). All good things. Thank you Terry!

    1. Absolutely, I donโ€™t see why not! I havenโ€™t tried it, but itโ€™s just like anything else โ€“ brownies, cake mixes, whatever. You should have no issue using a glass dish. With cakes mixes, etc. the oven temperature is the same for metal and glass pans, itโ€™s just a lower temp if you use dark or nonstick. So you should be fine! Maybe check it 5 minutes early just in case?

  4. Oh I know what youโ€™re talking about! Boyfriend always tells me to stop showing him recipe links+photos and rather make them, heโ€™ll be more enthusiastic when he can taste it, when for me it is enough to look at an apetizing photo ๐Ÿ™‚
