Iโ€™m a bonafide deli salad extraordinaire: Iโ€™ve spent my adult life making and eating chicken salad at every turn, any kind I can possibly get my hands on (or fork in).

I blame my love of mayonnaise.

Whether youโ€™re craving the flavors or just looking for a new lunch favorite, THIS is the recipe to make. Itโ€™s quick, itโ€™s easy, and it will taste exactly the way you remember.

Ingredient notes

  • Celery seed: I really like celery seed in chicken salad. But, if you donโ€™t have it and you donโ€™t want to buy it, itโ€™s okay to leave it out.
  • Chicken:ย Leftover rotisserie chicken, roasted chicken, or even something like Cajun Chicken works great in this recipe. You can use either chicken breasts or thighs, whatever you have.
  • Grapes: I prefer to quarter my grapes for chicken salad so they are roughly the same as everything else. But, itโ€™s okay if you just cut them in half.
  • Slivered almonds: To toast your almonds, cook them in medium skillet over medium heat until browned and fragrant, stirring occasionally, about 3 to 5 minutes.

Step-by-step instructions

  1. In a large bowl, add mayonnaise, lemon juice, curry powder, celery seed, and salt and pepper to taste (I like ยฝ teaspoon salt and ยผ teaspoon pepper). Whisk to combine.

  1. Add chicken, celery, grapes, scallions, almonds, and parsley. Toss to coat. Season to taste with additional salt and pepper.

  1. Serve on croissants, toast, pita bread, or in lettuce cups.

  • Storage: Store leftovers covered in the refrigerator for up to 4 days.
  • Freezer: Unfortunately, due to the mayonnaise, this recipe doesnโ€™t freeze well.
  • Whole30 Compatible: Use an approved mayonnaise such as Primal Kitchen Mayo and substitute lettuce leaves for the bread.
  • More mix-ins: Try shredded carrots, roasted cashews, Mango chutney, diced apples, cucumbers, raisins or cranberries, minced green onions, tomatoes, or some cooked quinoa.

Frequently Asked Questions

What if I donโ€™t want mayonnaise in my chicken salad?

No problem, just substitute an equal amount of Greek yogurt in your chicken salad. It has more protein and less fat, too!

Can I freeze chicken salad?

Unfortunately, chicken salad doesnโ€™t freeze well. The sauce contains mayonnaise which will break and separate after being frozen, leading to a watery salad with pockets of oil.

Who do I make Whole30 Compatible curried chicken salad?

ย Use an approved mayonnaise such as Primal Kitchen Mayo and substitute lettuce leaves for the bread.

What is curry powder?

Like chili powder, every blend can be different. Most curry powders contain a variety of spices including turmeric (for the bright yellow color), cumin, and ginger. You can also add ground coriander (cilantro seeds), garlic powder, and cinnamon. Just stir your preferred spices together in a small bowl or combine in an airtight container.

Ingredientsย 

  • 1/2 cup mayonnaise
  • 2 tablespoons lemon juice
  • 2 teaspoons curry powder
  • 1/4 teaspoon celery seed optional (see note 1)
  • Salt and freshly ground black pepper
  • 4 cups cooked chicken cubed or shredded (see note 2)
  • 2 celery ribs finely chopped
  • 1 cup red seedless grapes halved or quartered (see note 3)
  • 4 scallions white and green parts, thinly sliced
  • 1/2 cup slivered almonds or sliced almonds, toasted (see note 4)
  • 2 tablespoons minced fresh parsley
  • Bread or butter lettuce leaves, for serving

  1. Very good. There is a Cajun cafe? In Clearlake area of Houston, Tn. Where my sister buys curried chicken salad. They dice up water chestnuts and use slivered almonds theirs. Iโ€™m going to add at to your recipe.5 stars

    1. Thatโ€™s how I learned to make this salad! My mother-in-law said it is based on โ€œChicken Salad Veroniqueโ€ but, w/ waterchestnut slices and lightly toasted slivered almonds. I also add a few drops of Louisiana Hot Sauce, Malaysian Curry Powder, a dash or two of tumeric and a sprinkle of chopped cilantro. Tastes best when chilled overnight in a glass bowl covered with plastic wrap. Nice on butter lettuce or on small croissants.
