This all-purpose Dijon Vinaigrette recipe is delicious on green salads, pasta salads, and sandwiches alike. Itโ€™s a standard red wine vinaigrette with the dial turned up on the Dijon, so itโ€™s packed with punchy mustard flavor.

If you love Dijon mustard, this might very well be one of your new favorite homemade dressings.

This easy Dijon vinaigrette is a lot like Red Wine Vinaigrette or any other basic vinaigrettes, but itโ€™s loaded up with mustard. And not just any mustard: the sharp, tangy, complex flavor of Dijon. Itโ€™s the salad dressing I make most often and probably the one I love the most. But then again, Iโ€™m a mustard lover!

The mustard isnโ€™t just there for the spice flavor, either. Mustards work as a natural emulsifier with the oil in your dressings which gives them a thick, creamy texture without any dairy.

Whip up a big batch of Dijon vinaigrette with easy pantry ingredients and drizzle it on salads, grain bowls, and meal prep containers all week long.

  • Dijon mustard: Not crazy about Dijon? Reduce your mustard to 1 teaspoon and make standard Red Wine Vinaigrette. Or substitute brown mustard.
  • Oregano: Or substitute dried marjoram, dried basil, Italian seasoning, or your favorite minced fresh herbs (such as basil, chives, or parsley).

Step-by-step instructions

  1. In a small bowl, measuring cup, or in a mason jar with a tight-fitting lid, add extra virgin olive oil, red wine vinegar, Dijon mustard, oregano, and salt and pepper to taste (I like 1 teaspoon salt and ยผ teaspoon pepper). Stir or give it a good shake to combine.

  • Yield: This Dijon dressing recipe makes just over ยพ cup, enough for 6 to 7 servings, 2 tablespoons each.
  • Storage: Store leftovers covered in the refrigerator for up to 4 days.
  • Any vinegar: Use whatever vinegar you have on hand such as apple cider vinegar, white wine vinegar, or balsamic vinegar.
  • Lemon dijon vinaigrette: Substitute fresh lemon juice for the vinegar. For even more flavor zest the lemon before slicing it for juice.
  • More herbs: This recipe calls for dried oregano, but an Italian seasoning blend would also taste great. Dried marjoram is another favorite. Or try tarragon, thyme, or fresh parsley. A garlic clove, minced, is tasty too (or keep it simple with garlic powder).
  • Sweetness: If you prefer a sweeter dressing, add honey or maple syrup to taste.
  • Oil options: Substitute avocado oil or even canola oil for the olive oil.
  • Smooth as silk: Process your salad dressing in a food processor with an immersion blender for the smoothest possible texture. This aids in emulsification as well, with or without the mustard!
